Hi Everyone,

I'm new here so a little about myself. Early 60's, retired, male and I live just outside of Phoenix area AZ.

 

I just got my Zojirushi BBCC V20 out of storage, I had only used it a few times prior to that. I know very little about baking but my Grandmother sure did, I love it when she brought home made bread (still warm) over. 

 

I made the zucchini bread recipe the other day, came out pretty good, was a little crumbly I thought and a little sweet for me. It has remained in the Zor. for about 30 min after it was done as I was at the store. Not sure if that had anything to do with it.

 

Can I cut back on the sugar without adding anything???  Can I add a half cup of a 1/4 cup of rum if I remove the same amount of egg???

SPICED



ZUCCHINI BREAD



3 Large Eggs,



beaten lightly



1/3 cup Vegetable oil



2 cups All Purpose Flour



2 tsp. Baking Powder



1 tsp. Baking Soda



3/4 cup Sugar



1/2 tsp. Salt



1/2 tsp. Allspice



1 tsp. Cinnamon



1 tsp. Orange Peel



When beep sounds add:



1 cup Shredded Zucchini


3/4 cup Chopped Walnuts

 

I used King Arthur's all purpose flour
