After 2 years of trading up mixers & saving, I finally have the DLX! I have never heard anyone mention using the dough hook when making double, triple or quad batches of bread but the manual says to use it if using more than 5 cups of water. Any suggestions and/or helpful hints will be cherished!

I have been told that the dough hook is generally not necessary with regular whole-wheat bread. I believe you can make 8-10 loaves' worth w/o using the hook. I was told the hook is mainly for very heavy, heavy dough, such as you might find in certain Amish recipes.

Is it normal for the mixer to dance violently across the counter when mixing large batches on high speed? It doesn't do this as much if I use the dough hook:?

Yes, the DLX will "dance" a bit if you have a lot of dough on high speed. You could try turning it down to a lower speed for kneading larger amounts. How many loaves are you making at once?

I'm doing a triple recipe, I think. It's around 11-12 c. flour. It ends up being about 7 lbs of dough.

Has anyone ever done the max for the machine (15 lbs.)?

There's certainly nothing wrong with using the dough hook. And if you're getting good results, don't change! That is a pretty large amount of dough for the roller.
