I just purchased 2 of the medium sized Norpro bread pans (8") and was really surprised at how small they seemed when I received them in the mail.  Are these considered the normal sized bread pans for the Basic recipe?  Should I have gone with the larger size?

The large (10") pan is what I use for my loaves. (The basic recipe in the most recent red cookbook makes two loaves in the 10" pans.) The medium is what some people use for their everyday bread, but I find it a bit too small. But for now, your loaves will rise up nice and tall for you. The 8" are also great for banana and zucchini bread.
