Hello,

We were dialing in the process and then consistancy of the Ezekiel bread with the stir by hand method.

Now we are using the Assistent and are getting doughy bread. The dough seems more moist before and after baking.

We are using the recipe from Bread Beckers and using the same ingredients etc as when stirring the dough by hand.

We're mixing for 10min on low setting now on the EL Assistent.

any help for the baker ?

You may be over-mixing it. Try cutting down your mixing time in the DLX to 5 minutes and see if that helps.

Thanks, we dropped to 5 min and added 2 tblspoons hard red wheat & much better.

I suspect we can tweek it a bit more ...
