If you've ever enjoyed the Latin American treat of fresh horchata, you know how dismal the offerings in this country are (Instant Horchata Mix.....???...yeeeaaccchhh!!!). Nothing can capture the wonderful flavor and texture of the real thing, enjoyed hot ot cold. If you have a Soy Milk machine, you're in business.

Make rice milk according to your machines directions. While it is still hot, add 1/4 cup succannat (or sugar) per quart, a few drops vanilla (not imitation) extract, 1 tsp cinnamon, and chill.
