A friend of mine has learned that he's allergic to wheat bran, not gluten, just the bran. His wife gave me all her wheat berries. I was going to reimburse her by ordering an alternative grain in the next coop round. We are struggling to find recipes/ideas though. Any suggestions or resources, for bread and general baking?
You could try Kamut, which is a very mild-tasting grain high in vitamin E. It's low in gluten, but you can add gluten to recipes to help Kamut bread rise. You could also try spelt. I don't know whether or not your friend would have the same reaction to the spelt bran, though. The Kamut is almost rice-like, so she may want to start with that.
