There's a great recipe in the Bread Beckers Recipe Collection, page 55 of the current edition. The recipe is for Creamy Caesar Salad; the croutons go with the salad. In case you don't have the book here it is:

2 tsp. extra virgin olive oil
3/4 tsp. Cajun seasoning
1 clove garlic, minced
2 cups 3/4" bread cubes

"Combine olive oil, Cajun seasoning, and garlic in glass dish and microwave* on high for 20 seconds. Add bread cubes and toss gently to coat. Bake at 400 degrees for 15 minutes until golden brown."

*If you prefer, you may warm the first 3 ingredients in a saucepan over low heat on the stove. 

Croutons are a great "save" for the occasional "bread failure".  Be creative and change up the seasonings any way you like. Enjoy!
