Hello,
I just returned from the HEAV Conference in Richmond, VA. Sue had a great recipe for pumpkin, chololate chip, muffins. They were fantastic! Would you please share the recipe with me?

You can use Ezekiel Mix flour for the basic muffin recipe in the red cookbook. Add to the base recipe:
1/2 can of pumpkin
1, 3 oz. jar of baby food sweet potato
3/4 C mini chocolate chips
1 tsp. cinnamon
1/4 tsp. nutmeg (or more to taste)
1/2 C sucanat (or molasses granules)
I have another version if this one doesn't hit the spot for you.

Can you use Kamut flour with this recipe or would you need to change the amt. some?

| It will have a different flavor with the Kamut. You might want to cut back a little on the liquids, or add more Kamut flour. It is a light grain, so it may need a little more oomph to make it work.

This recipe can be altered to make sweet potato muffins alone. Skip the pumpkin, chocolate chips, and banana (although you'll never taste the banana--it just adds sweetness and moisture). You can also add applesauce for extra sweetness and moisture. Vary the amounts of cinnamon and nutmeg to suit your family's taste.
As for sweet potato bread, I would use a banana bread recipe and just substitute the sweet potatoes in place of the bananas. You will probably want to increase your sucanat (molasses granules) to make up for the missing sweetness of the bananas. The red Bread Becker cookbook has a banana bread recipe in it. Do you have that, or would you like me to post it?

I have the Bread Beckers cookbook. I'll give it a try!
You had previously sent me a recipe for yeast rolls. Have you ever tried to freeze them? If you did, would you take them out of the freezer, let them thaw and rise again before baking them? Thanks!

Yes, rolls freeze very well after they have been baked. I have not tried to freeze them raw. I have refrigerated raw dough for rolls overnight, and they baked up nicely in the morning. So freezing might work. I would put them in the freezer after the dough has risen once and been shaped into rolls. Put them in the pan you plan to bake them in and cover with plastic wrap. (This is what I do when I refrigerate them.) When you're ready to bake them, take them out an hour to an hour and a half before you want to put them in the oven. From the refrigerator, you'll want to take them out 30-45 minutes before baking.
If you do try freezing rolls, please let us know how they turn out.

| You can just do straight pumpkin and skip the sweet potato baby food. You can also add a snackcup of applesauce, or even mashed zucchini. This is a really flexible recipe that hides things well (for those with picky eaters).
