I was at a Bread Beckers class in December and bought a whip cream dispenser. I can't find the recipe that they gave for whipped cream. Does anyone have this?

Whipped Cream:
1 C whipping cream
1-2 T mild honey (sage, Tupelo, clover)
1/2 tsp. vanilla

Did Jamie have a recipe using agave nectar?
Do you just put it all in the container?

| I don't see why you couldn't use Agave Nectar the same way. I would put the honey (or Agave) in last to keep it from sticking to the bottom of the canister.

I just made it with honey.
BEWARE! The first squirt is very strong! I aimed it at my hand over my sink. When I pulled the "trigger" it went everywhere! 3 walls in my kitchen had white dots on them! I almost took pictures because no one would believe how far it went! My face was also polka dotted! For the second squirt I went outside. It worked fine then! It was delicious! I'm going to use it on some crepes and fresh strawberries tonight!
3 more questions:
Will it keep for 2 weeks in the canister in the refrigerator?
Can I double the recipe? Then I would just have used one nitrogen cartridge?
Why did the first squirt go off like a bomb?

I should have warned you about the spraying power of the whipper. The first time I used it, I was serving people at a BB class. I hosed someone standing in front of me! Slightly embarrassing. At least you just made a mess! The key, I learned the hard way, is to hold it upside down, not at an angle.
It should keep fine in the fridge. I wouldn't try to double it. I'm pretty sure the recipe makes as much as the container can hold. And my guess is that the first shot probably has a lot of pressure behind it -- more air than whipped cream.
