I have tried the brownie recipe in the BB book, but we don't like it. Does anyone have another tried and true recipe for brownies?

What kind of grain did you use? Try using Ezekiel mix. I know that sounds a little odd. But we have made it this way at the last few fairs/conventions we've been to, and people couldn't get enough. The Ezekiel mix adds moisture. Try this slight variation on the recipe in the book (full credit to J&A Becker!):

Brownies (double recipe)
 

2 C freshly milled Ezekiel mix flour

3 tsp. baking powder

1 tsp. salt

1 C unsweetened baker’s cocoa

3/4 C mini chocolate chips

 

1 C butter

3 C sucanat with honey

4 eggs

2 tsp. vanilla

¼ C whole milk (increase to ½ C for extra-gooey brownies)

 

Preheat oven to 350. Melt butter in a small pot on the stove. Stir in vanilla, then sucanat w/honey. Mill Ezekiel mix. Stir together dry ingredients, including choc. chips. Whisk eggs and milk, then combine with sucanat/butter mixture (make sure the butter mix isn’t too hot for the eggs). Combine all ingredients and pour into 9x13 pan. Sprinkle with additional chocolate chips if you are a true chocoholic. Bake at 350 for 25-30 minutes. If using a shorter, deeper pan, increase baking time by 5-10 minutes.

I used the white wheat flour. I don't have any Ezekiel flour and have not heard of it. What else would I use that flour for? I hate to order it just for brownies.

Soft white flour will also work, but won't be quite as moist. You can make Ezekiel mix yourself with a few grains you may already have on hand, and you can get the beans from the grocery store. The price isn't as good as BB, but it'll do if you're in between co-op orders.

I should have mentioned in the brownie recipe that the baking times may vary. Sometimes it takes longer than the posted time for the brownies to get done all the way through.

For Ezekiel Mix, combine the following whole grains & beans: 
  • 2-1/2 cups hard red wheat
  • 1-1/2 cups spelt or rye (Biblically spelt was used, Ezekiel 4:9)
  • 1/2 cup barley (hulled barley)
  • 1/4 cup millet
  • 1/4 cup lentils (green preferred)
  • 2 Tbs. great northern beans
  • 2 Tbs. red kidney beans
  • 2 Tbs. pinto beans
Stir the above ingredients very well.  Grind in flour mill just before use. (I keep a 1 gal. pail of Ezekiel mix grains made up and ready in the pantry.)

It's good to have Ezekiel mix on hand, even if you never make the bread. It makes great muffins that are high in protein and fiber. I try to keep some mini muffins frozen for my family to have with breakfast or as a snack. We use the basic muffin recipe in the red BB cookbook, substitute Ez. mix and add some chocolate chips, cinnamon & nutmeg. You can also throw in things like applesauce, baby food sweet potatoes and a ripe banana for extra flavor & sweetness.

No, they only sell it in Ziploc bags. What I do is buy the beans & barley by-the-pound in Ziploc bags. I already use the other grains and have them in big buckets. Then I just triple the recipe and store it in a 1-gallon pail.

Have no fear! I will share with you, the Ultimate Brownie Recipe, guaranteed to satisfy even the most rabid chocoholics! They are tall, like cake brownies, but chewy and chocolaty like the super-fudgy ones Little Debbie makes. These will make you glow in the dark!

8 oz.-pure Cocoa Powder

1 cup-butter or margarine

5-eggs

3 cups-sugar, Succanat (or equivialent), or honey.

2-1/2 cups of your favorite nuts, pecans, walnuts, cashews, etc...

1-1/2 cups freshly ground soft white wheat

1 Tbsp-pure vanilla extract

1 tsp-salt

(for a 'cakier' textured brownie, add 1/2 tsp each of baking soda and baking powder)

Pre-heat oven to 375 degrees. Grease a 9 x 13 square pan.

Melt cocoa and butter together in a saucepan over low heat. Set aside.

In your mixer, beat eggs, sugar, and vanilla on high speed for 10 minutes. Add cocoa mixture, flour and salt until just mixed. Stir in nuts by hand.

Pour the mix into the baking pan and bake at 375 degrees for 30-45 minutes, or until a toothpick inserted in the middle comes out clean. DO NOT OVER BAKE! Allow to cool. You can frost them, but it is not necesary.

On a chocolate lover's scale from 1 to 10, this comes out at around 11.5!

Right on with the muffins. I always keep a few dozen baked up for in-between meals, company, and coffee and tea breaks. I consider them a staple, just like fresh baked buns.
