My plain and alternate muffins have turned out terrible. I use fresh ground flour. The muffins look wonderful, but they taste salty and bitter. I hate to toss out home baked goods, but noone can eat mine. My Ddil and my husband tease me about using salt and Baking Soda in wrong amounts. If someone would please send me their amounts of:
If you over-do it on the baking soda, you will taste it. Yes, I've done that one too. Yuck. The recipe in the red BB cookbook is a great basic recipe. I usually throw in a snack-cup of unsweetened applesauce and maybe a little extra sucanat w/honey. We like our muffins a bit sweeter. Here are the amounts of soda, etc. from the book:
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
From the basic recipe, you can throw in all kinds of things to add a different taste. I always use 1 tsp. cinnamon and 1/4 nutmeg. And chocoate chips frequently find their way into the mix as well. You can also put in blueberries (frozen, thawed and drained on a paper towel first).
If you still taste the soda too much, try increasing your flour to 3 C.

Thanks, I'll take your advice. I appreciate you verifying the amounts. I like your suggestions for the additions. We love chocolate chips. I've used applesauce and even babyfood prunes to moisten and sweeten baked goods. Yum.
