I have problems using the DLX for jobs other than bread.  I find that when making cakes and cookies, the butter and succanat or sugar get "stuck" to the roller and I have trouble incorporating all the other ingredients.  What am I doing wrong?

Those ingredients will stick to the roller a little bit, but shouldn't be a problem. Have you used that white scraper that comes with the DLX? One side of it fits perfectly into the grooves of the roller.

When I am making cookies, I mix the ingredients in this order, and it seems to keep the sticking down to a minimum:

Cream together sucanat, butter and vanilla on high speed until well-blended. Scrape off any mixture that sticks to roller. Then add your eggs and cream together on high speed until fluffy. Next add your dry ingredients, put on low speed and mix until combined. The dry ingredients should take off most of whatever was stuck to the roller. You should only have to scrape off a little.

If making chocolate chip cookies, after partially mixing the dry ingredients, I pull out the roller, add the chips, and continue to mix on low speed using a hand-held spatula pressed in the middle of the bowl for just a couple of minutes. This scrapes up any dough that was on the bottom of the mixer incorporates it in with the chips.
