Does anyone know what the shelf life of an unopened 6 gallon bucket container of various beans and grains?  I'm interested in the black turtle beans, garbanzo beans, black-eyed peas and brown rice.  Also, once these containers have been opened, if I use a gamma seal, how much time do I have after this point?

The shelf life on most grains is indefinite if stored in a sealed bucket where no bugs, rodents, or moisture can damage it.  Opening the sealed bucket does not affect the storage of the grain as long as it is kept closed so no bugs or moisture can damage the product.  Gamma lids are perfect for the buckets of grain that you use from as they make it easier for keeping the bucket closed tightly.
Brown rice and oat groats however are not as storable.  They have about a 6 months to 1 year shelf life.  Because rice and oat have an outer hull that must be removed for human consumption, the oil in the seed is then exposed, making these grains more susceptible to rancidity.  The cooler the storage temperature the longer the shelf life.
I have noticed that unopened rice and oats seem to last about 1 year.  Opened may only be 6 months.  You will notice a significant smell and taste change particularly in oats.  They will both have a strong rancid odor and the oats will not have the sweet flavor as in fresher oats.
Some beans will store longer that others.  I have noticed no problem with garbonaos or black eye peas storing for a very long time.  I have had mine for years.  Again I use a gamma lid on the buckets.  Black beans however do not store as well.  After about 1 year they get really dry and will not rehydrate for cooking and will stay very crunchy no matter how long you soak or cook them.  They are probably fine at this point for milling to use as flour.

I have a 6 gallon bucket of oat groats that were purchased from BB on 11/15/2007. They still make good bread and I just stuck my head in the bucket and they are not rancid. I use Gamma lids and two desiccant packs from Cabella's.
Don't sit on the Gamma lids!!! LOL

I think I may be mistaken about my oats not being rancid.  The last loaf of bread appears to have not digested well; lots of gas and heartburn.
Does anyone know the affect of eating rancid oats??

If the oats are rancid you WILL be able to smell and taste it. They taste like old oil, a very distinctive flavor--ICK. They will smell a bit like crayons. I always wondered if I would be able to tell if my oat groats had gone bad. Then they went bad. Believe me, you'll know immediately! But they were fine for 2+ years in a bucket with a gamma lid. 

Give your oat groats a good whiff, and taste a few raw. If they still smell and taste fine, then chances are your digestive woes are due to some other factor.
