Hi I was wondering if any of you have been able to make a bread that will stay fresh for more than 12-24 hours. It needs to be wheat free & gluten free. We have been able to make a bread, but the next day it will be dry, flaky, etc. etc. Any help making a bread that will last at least a couple of days will help. Also I've seen the cookbook Country Beans by Rita Bingham. Has anyone tried it? Do the breads stay fresh?

A co-worker recommends The Allergy Self Help Cookbook.  She didn't recall the author's name but says the recipes are very good.
