Can I make this bread successfully with less honey?  1 cup seems like a lot for just two loaves, and I need a low-carb version that I can make myself, since I am trying to control my blood sugar (my diabetes is approaching emergency-status and I'm getting pretty strict with the carbs).

You could try less honey, but the taste may suffer. It depends on how true to the recipe you want to stay. If you don't mind  experimenting, here are some suggestions:

Add cinnamon and nutmeg to distract from the decrease in sweetness. You could also add applesauce or a banana. These will add sweetness along with some fiber. But keep in mind that they will also add moisture and may affect the baking time. Adding raisins would give a flavor boost too, without the added moisture.
